It's just a breather hose thing. Basically excess oil from the head goes through that hose and into the intake manifold to be burnt off.

It's a Positive Crankcase Ventilation hose (PCV). It vents gasses introduced into the crankcase via slip past the piston rings + a few other places. These gasses often pick up a bit of oil on the way out. The pipe plumbs back into the intake tract so the gas / oil mix is burnt, not put straight into the atmosphere.
You correctly described the basic operation, sort of.
You can have any brew you want... as long as it's a Datsun / Corolla / What is that?
